If you just want to write some simple notes or edit plain text, you will probably find yourself working with Windows Notepad. It's so basic and hasn't really changed much for years. There is no code syntax, you can't work with multiple projects unless you open multiple versions of Notepad and there's no additional support for programming code.
Twistpad 1.58 SR1 is a replacement for Windows Notepad and will enable you to edit your existing plain text documents, but will enable you to open and manage multiple documents. It's extremely quick, too, so you won't find that it's much slower than Notepad, either. If you're a programmer and needs to edit raw code, it supports most of the regular languages and will highlight your code as you'd expect. The only downside is that it is shareware and there are free alternatives, such as the excellent 5-star rated Notepad2 2.0.16.
